Chunky Lentil & Vegetable Soup

This is a hearty and delicious soup. Add extra spices such as cumin, red pepper flakes and a pinch of cinnamon for an extra flavorful dish! You can also make this in a slow cooker if you don’t have time to stand over the stove!


  • 1 ¼ c. lentils, rinsed
  • 2TBSP olive oil
  • 1 large onion (chopped)
  • 2 c. butternut squash (skinned and diced)
  • 28oz can of crushed tomatoes
  • 1 c. water or vegetable stock
  • 1 tsp salt
  • Paprika, lemon juice and parmesan cheese as garnish


  • Bring 5 c. water to boil, add lentils and cook 20 minutes till lentils are tender
  • Saute onion in oil until tender
  • Add squash, tomatoes and water to onions (cook until squash is tender)
  • Drain lentils and add to squash/veggie mixture
  • Simmer to remove excess liquid
  • Serve and top with paprika, Parmesan cheese and lemon juice
  • Serve with toasted garlic bread and salad
