Slow Cooker Hoppin’ John

This is a quick and easy “set it and forget it” meal. Leave out the bacon for a vegetarian version of this tasty meal!
Makes 6 servings


  • 4 strips thick-cut bacon
  • 1 small onion, diced
  • ½ tsp. crushed red pepper flakes
  • 1 c. dried black eyed peas
  • 15oz can diced tomatoes (drained)
  • 1.5 c. brown rice
  • 1 tsp. salt


  • Crisp bacon in pan on stove, remove bacon & add onion to drippings and sauté till soft
  • Add bacon, red pepper flakes, black eyed peas, and 4 cups of water to the slow cooker
  • Cook on low for 3-4 hours
  • Stir in tomatoes, rice and salt
  • Cook 1-1.5 hours until rice is tender
  • Serve alongside vegetables and add cheese as a topping
