Turkey Stuffed Bell Peppers

This is another quick and easy meal. Throw everything in the crock pot and enjoy your meal a few hours later!
6 servings


  • 1lb turkey (season with Italian seasonings or use turkey sausage)
  • 1 c. uncooked brown rice
  • 8oz. Mozzarella (cubed)
  • ¼ c. fresh basil (or 2 TBSP dried basil)
  • 6 bell peppers (remove tops and seeds)
  • 32 oz. can crushed tomatoes
  • 1.5 c. chicken broth
  • ½ c. parmesan cheese


  • Combine turkey, rice, mozzarella cheese and basil in a bowl
  • Spoon turkey mixture into prepared bell peppers (fill ¾)
  • Place peppers in slow cooker
  • Pour tomatoes on top of peppers
  • Pour broth around peppers
  • Cook on low 5-6 hours (internal temp of 165°F)
  • Add Parmesan cheese on top before serving
  • Serve with salad
